- 2 sweet potatoes
- 2 olive oil
- 1 onion, finely chopped
- 2 garlic, minced
- 1 cup vegetable broth
- 1/2 coconut milk
- 1 nutritional yeast (optional, for a cheesy flavor)
- 1 smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Prepare the Sweet Potatoes
Preheat your oven to 400°F (200°C).
Wash and scrub the sweet potatoes. Pierce them several times with a fork.
Place the sweet potatoes on a baking sheet lined with aluminum foil or parchment paper.
Roast in the preheated oven for about 30 minutes, or until they are tender and easily pierced with a knife.
Sauté the Aromatics
While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
Add the finely chopped onion and sauté for about 5 minutes, until translucent.
Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Blend the Sauce
Once the sweet potatoes are done, let them cool slightly, then peel off the skins.
In a blender or food processor, combine the roasted sweet potatoes, sautéed onions and garlic, vegetable broth, coconut milk, nutritional yeast (if using), smoked paprika, salt, and pepper.
Blend until smooth and creamy. If the sauce is too thick, you can add more vegetable broth to reach your desired consistency.
Serve
Serve the sweet potato sauce warm, garnished with fresh parsley if desired.
This sauce pairs well with pasta, roasted vegetables, or as a spread on sandwiches.
