Ingredients
  

  • 2 sweet potatoes
  • 2 olive oil
  • 1 onion, finely chopped
  • 2 garlic, minced
  • 1 cup vegetable broth
  • 1/2 coconut milk
  • 1 nutritional yeast (optional, for a cheesy flavor)
  • 1 smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes. Pierce them several times with a fork.
  • Place the sweet potatoes on a baking sheet lined with aluminum foil or parchment paper.
  • Roast in the preheated oven for about 30 minutes, or until they are tender and easily pierced with a knife.

Sauté the Aromatics

  • While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
  • Add the finely chopped onion and sauté for about 5 minutes, until translucent.
  • Add the minced garlic and cook for another 1-2 minutes, until fragrant.

Blend the Sauce

  • Once the sweet potatoes are done, let them cool slightly, then peel off the skins.
  • In a blender or food processor, combine the roasted sweet potatoes, sautéed onions and garlic, vegetable broth, coconut milk, nutritional yeast (if using), smoked paprika, salt, and pepper.
  • Blend until smooth and creamy. If the sauce is too thick, you can add more vegetable broth to reach your desired consistency.

Heat the Sauce

  • Return the blended sauce to the saucepan and heat over low to medium heat, stirring occasionally, until warmed through.

Serve

  • Serve the sweet potato sauce warm, garnished with fresh parsley if desired.
  • This sauce pairs well with pasta, roasted vegetables, or as a spread on sandwiches.
